No Fail Popover Recipe + 3 Flavored Butters


Around here we are all crazy for fresh, hot, popovers. This recipe is SO easy - you don't even have to preheat the oven - and it comes out perfect every time.

I like mine with butter and a sprinkle of cinnamon sugar, but if you're entertaining, why not make some flavored butters to serve with the popovers? They are super easy to make but taste delicious! I have recipes here for cinnamon sugar butter, raspberry butter, and bacon herb butter!

"Do Not Go Quietly" {Book Review}


Book Review: Do Not Go Quietly by George and Sedena Cappannelli

The book is pitched as "an extraordinary and important book for all GenXers (40-45), Boomers (46-64) and Elders (65+). "  At age 42, I fall under the GenXers category. I am reminded throughout the book at it is for "those of us who are in the second half of life - and please remember this group includes everyone who is 40 and older". In reality, I would, perhaps, recommend this book only to someone who fit under their "Elder" category of  65+ - and even then I would only recommend it to someone who was really struggling with the idea of aging.

Skinny Mocha Frosty OBSESSED!


I am supposed to post a fitness tip today for week 2 of the Summer Fitness Challenge but having had a rough week of heat, humidity, storms and a power outage my workouts were nothing to write home about!

Healthy living isn't only about working out... Eating right is super important, too! I've found a frosty treat that is chocolatey, creamy, icy, gives me my caffeine fix, and has no artificial sweeteners or junky ingredients! Tastes kind of like a Wendy's Frosty but with a kick. Oh yeah... Did I mention that it only has about 100 calories in a big glass full of cool tastiness?

Preparing for a Multi-Day Power Outage

Late last week the Minneapolis area was hit with severe storms that downed thousands of trees and left 590,000 homes and businesses without power. Some are STILL without power 5 days later.

We were fortunate to have only had to go a little over 24 hours without electricity but I was shocked at how ill prepared I was to handle it.

Saturday morning - no power - no Keurig - no coffee. No big deal, right? I'll just make a quick run to Starbucks. Except that they didn't have power either. After driving around for 45 minutes trying to find someplace that had power and didn't have a line around the block, I broke down, bought some horrible gas station coffee and headed for home.

So here is my solution. It's a 3 day emergency kit for when you become URBAN AMISH like we were, but you're not a "Doomsday Prepper" and you're not preparing for the zombie apocalypse. There are a million websites out there already that can help you with that. This kit is a little more geared toward those creature comforts that we COULD go without... but we don't really want to.

Create a Coffee Station

Using a simple tray that I picked up at the thrift store, I'm creating a "coffee station" in my kitchen. By pulling it all together, hopefully it will end the question, "Honey... Where's the sugar?" and we'll have everything at our fingertips first thing in the morning. When we need it the most!

Lilac White Ghirardelli Chocolate Recipe


Lilacs are one of my very favorite flowers and I'm always sad when the short blossoming time comes to an end. Last night I searched for ways to preserve the amazing scent of lilacs and came across some interesting recipes using lilacs. I remember tasting a lilac flower as a kid and thinking that it was sweet, like honey. Today I created my own recipe celebrating lilacs using Ghirardelli white chocolate and fresh purple lilacs.

To prepare the lilacs, just dip the cluster into cold water and swish around a bit. I chose unsprayed lilacs from my yard, so I only needed to remove the dust from them. After allowing them to dry, I pulled the flowers from the stem until I had a nice dish of petals. You must make sure that there is no green at the end of each flower or your chocolate will taste bitter! You just want the petals!

I consider myself to be quite knowledgeable when it comes to living mindfully, eating right, and having a healthy lifestyle. I was completely and pleasantly surprised to learn a TON of new things from this gorgeous book from Miraval - the luxury spa and resort in Tucson, Arizona.

5 Favorite Rhubarb Recipes - #1 Grandma Alma's Custard Rhubarb Pie


My Grandma Alma was an awesome cook - especially when it came to baking. She didn't cut corners with sugar and didn't dream of making a "low-fat" version of anything. I guess that's why everything tasted so good.

This recipe calls for half & half - and trust me - it's worth the splurge! It makes a wonderful custard that blends beautifully with the rhubarb to really taste better than you can imagine!

My sister made this every year with my boys when they were little and they'd sing "Be-Bop-A-Re-Bop Rhubarb Pie" from "A Prairie Home Companion" while they made it. Except when he was really little my youngest used to pronounce "rhubarb" more like "bwoo-barb". Great memories! GREAT PIE!

5 Favorite Rhubarb Recipes - #2 Shirley's Rhubarb Muffins


I love to have something sweet for breakfast in the morning. Of course I'm hungry again right away, but muffins, cookies, pastries - all are my favorite things to eat in the morning.

The goal is to try to find recipes for sweets that are not TOO sweet and have a bit of nutritional value. I'm not saying that these muffins are a picture of healthy eating at its finest, but with a little bit of fruit and a few nuts I think I could probably do worse.

I do know that they are a tasty way to start the day!

Nothing beats the comfort of warm bread pudding on a rainy spring day, and I love this recipe from my neighbor Shirley. It's a nice, custard-y bread pudding that is fab with a bit of whipped cream or vanilla ice cream.

Shirley and Gordy (or as we sometimes call them "Shorty & Girly") are great neighbors. Always friendly and ready for a chat over the fence. Plus you've got to love a neighbor that says any cucumbers that grow on your side of the fence are yours!

My name is Teri... and I am a crisp-a-holic. When I make a pan of rhubarb or apple crisp, I cannot stop eating it! I'll eat it for breakfast, I'll eat it for lunch, I'll eat it for a snack - until it's gone. I truly cannot help myself!

I love this rhubarb crisp the best, perhaps because it's the one that my mom used to make, but it could also be because of all the buttery sweetness!

Would you grant a phone app permission to record audio and video without your knowledge? Have you already? 

Today I was going to download an app on my phone called "shopkick" where you get rewards for shopping. Target said they'd give me a $2 gift card for downloading and using the app so I thought I'd give it a try. Now I thought google and facebook were bad when it came to granting access to private information, but you have got to see this list of things that this app wanted me to allow access to! Cut up a watermelon in 2 minutes!


I've been dying for watermelon and bought my first one of the season today! It's not the best I've had, but it's delicious nonetheless. Thanks to C for telling me about this awesome trick!

First, cut both ends off of the watermelon.
Slice away the outside rind, working your way around until all you have left is the melon.
Cut it in half, then slice each half and flip them so that the slices run horizontally...
Like this!
Slice each stack, then rotate and slice again the other way to make cubes.
Seriously! About 2 minutes. Including rinsing and drying my hands to take all of these pictures!
A great pile of watermelon in no time at all!

Estate Sale Scores!

I was making a quick run to CVS this morning and saw a sign for an estate sale. I really CANNOT drive past an estate sale, so I went to check it out. 

They had a TON of stuff and it was priced to sell! It's been a very long time since I bought anything with the intention of reselling it, but I couldn't pass these things up - and I certainly can't keep it all! I'll be listing some of these great things on eBay in the next few days! As soon as I have them up, I'll post a link.

Earth Friendly Henna Hair Dye


In honor of Earth Day, I thought I'd feature a post on using Henna to color your hair. Henna is becoming more and more popular as a safe alternative to traditional hair dye. It's totally safe to use on every type of hair - permed, bleached, tinted, or "virgin" hair and creates natural, vibrant highlights.

I've used it several times to not only cover up the %*>!@$ gray hair that is becoming more and more present, but also to give my hair a bit more body and shine. Of all of the brands that I've used, I like Aviga Henna the best. You can buy it at some food coop stores, or you can order online from somewhere like Ball Beauty.

Thrift Store Finds

I love stopping into the local thrift store to see what they have. It's kind of like a treasure hunt for me and I stop in frequently. Sometimes I find a TON of great stuff, and sometimes I find nothing. It's always hit or miss, but today I found some great treasures for spring!

I love the bag and can't wait to take it to the beach this summer! It's absolutely gorgeous - there's no way that a picture can do it justice, but I'll try!

Delicious Egg Bake - Perfect for Brunch!


I've still been feeling a bit under the weather... I don't know if it's allergies because of the snow melt, the beginnings of buds starting to pop out on the trees or what's going on but I can't seem to shake this yucky feeling. Thankfully, I have lots of leftovers from the weekend and I've not had to cook much!

A big hit around here on Easter morning was a super simple egg bake that I made with ham, red peppers, onion and spinach. My son said it was the best egg bake that I had ever made!

Closet Overhaul Complete!

My closet overhaul is finally complete! It took me a LOT longer than I thought it would... and I tried on a lot of clothes that no longer fit me! They're now happily stashed on the tippy top shelf of my hubby's closet for after I lose weight. (haha!) Some day I'll be ready to get rid of them...

I pulled the shoe organizer out from the corner so I could have easier access to the shoes, but in doing so I lost a lot of hanging space so I folded all of my white tees instead of hanging them and put them in two stacks - one for short sleeves and one for long sleeves. (I buy them in bulk when they are on sale. You can never have too many plain white tees!)

AND here's how it looks now!







Best of all, everything FITS, there's nothing I won't wear, (sorry honey, the cut off royal blue sweats are still in there...) and I know I have easy access to my regulars!

I realized that I have a lot more bottoms than I have tops. Kind of odd considering that I, like almost everyone, have a hard time fitting bottoms. Plus I live in a tee shirt, (or tank top) scarf and cardi pretty much year round. 

NOW all I need is some warmer weather so that I can actually WEAR some of my favorite spring items! Until then, my suede and denim jackets, my cardigan sweaters, and my long sleeve tees will be in heavy rotation!
