5 Favorite Rhubarb Recipes - #3 Shirley's Johnson's Rhubarb Bread Pudding


Nothing beats the comfort of warm bread pudding on a rainy spring day, and I love this recipe from my neighbor Shirley. It's a nice, custard-y bread pudding that is fab with a bit of whipped cream or vanilla ice cream.

Shirley and Gordy (or as we sometimes call them "Shorty & Girly") are great neighbors. Always friendly and ready for a chat over the fence. Plus you've got to love a neighbor that says any cucumbers that grow on your side of the fence are yours!

Shirley Johnson's Rhubarb Bread Pudding
ingredients:
2 - 3 cup diced rhubarb
1¼ cup sugar
2 rounded Tbsp flour
¼ tsp cinnamon
4 slices white bread (toasted, buttered, cut into squares)
2 beaten eggs
1¼ cup milk
1 tsp vanilla
3 Tbsp sugar
directions:
Mix rhubarb, sugar, flour, and cinnamon together lightly and put in 8" x 12" pan. (sprayed) Lay the toast squares on top of the rhubarb mixture. Mix together the eggs, milk, vanilla, and sugar and pour on top. Bake at 350ยบ for 25 to 35 minutes.
