Celebrating Autumn with Cook Yourself Happy: The Danish Way by Caroline Fleming

It's September 22nd. Where has the summer gone? Even though it DEFINITELY still feels like summer here in Minneapolis today, my thoughts are turning to autumn and I'm noticing that my body is already craving something different than the grilled foods and salads that we've been enjoying.

And so I found myself searching for some new recipes, which is how I came across Cook Yourself Happy: The Danish Way by Caroline Fleming. I'm a huge fan of the Danish way of life called hygge, a sort of coziness, (You can read more about it in my post Keep Warmth In Your Heart) so I was immediately drawn to this title.

You might have heard of author Caroline Fleming from "Ladies of London." She is SO FABULOUS (a true Danish Baroness!) and her story is quite interesting... Though she hails from a country that is known as the happiest on earth, she has struggled to find her happy place. Having grown up in a royal family, she was instructed at a very young age exactly how she was to do everything. She said, "You're told how you're going to do everything in your life. I thought I knew my destiny. But I woke up, aged 27, 28, and my heart and soul started knocking. And I realized I had completely disconnected from my feelings because of wanting to live up to expectations." 

So she started working on herself, and rediscovered her first loves - food, family and Denmark - eventually creating this beautiful cookbook that focuses on the most delicious and nourishing traditional Danish recipes to help boost your sense of well-being both inside and out.

From light meals that you can enjoy any time to hearty soups, fresh breads, and hearty main dishes, we are talking COMFORT FOOD EXTRAORDINAIRE! If you're looking for some wonderful new recipes for the upcoming fall and winter months, I highly recommend this beautiful book.
